Every product found here at Dolcettina has been done by me, Althea. The preparation, baking and decorating is done here. My father was a patissiere and it was natural for me to take after him. My father's confectionary was called "Dolcezza" and was very popular in Mosta. That is where the name of my shop emanated; "Dolcettina" - the Dolcezza little one.
This work is very demanding but satisfying. When my father got to know that I was going to take up after him, he was not in favour because he was aware of the sacrifices that go with this profession. But I always dreamt, from when I was a little child, that I would one day have my own shop and confectionery. I remember I used to be really enthusiastic to go next to dad from a very early age. My friends used to invite me to go out with them but I used to decline often and instead go to serve customers with my father. At school I opted for Home Economics on account of the interest I had in this subject. After obtaining my A Levels I had worked in the travel sector for seven years. At the time my colleagues and family used to ask me to bake and deliver biscuits and cakes because they knew I was skilful. From then on I never looked back and when I stopped working after having two children, orders started increasing and I started to work from home.
A short while ago I decided to open a confectionary and cafeteria, Dolcettina by Althea. Here I bake sweets and serve fresh to clients whilst they can also come to enjoy a coffee. I am now living what I dreamt of at the age of 14. What I enjoy doing most is when a client comes to place an order but trusts me with the creation of the final product rather than reproducing from an image.
The days here are long. 12 hours shifts at Dolcettina while still having to make the necessary preparations. I specialize mostly in products made from pure almonds. Quality is a priority. I have continued to make genuine products just as I used to do at home. I prefer to keep everything genuine and fresh daily and that is why people return. The busier I am, the happier I am. Clients come here to take something good home with them to share with their families.
Baking cakes nowadays is an art. Visuals are important and are what catch the eye first. But as I was once told by a client here you will find not only a visually appealing cake but one that is also good inside." - Althea
